Ingredients:
For the Fried Fish:
- 4 white fish fillets (cod, tilapia, or haddock)
- 1 cup all-purpose flour
- 1 cup cornmeal (or panko breadcrumbs for extra crunch)
- 1 tsp paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp cayenne pepper (optional)
- 1 tsp salt
- ½ tsp black pepper
- 1 egg
- ½ cup buttermilk (or regular milk)
- Oil for frying (vegetable or canola)
For the Seasoned Potatoes:
- 4 medium potatoes, cut into wedges or cubes
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp dried oregano
- ¼ tsp cayenne (optional)
Instructions:
For the Potatoes:
- Preheat oven to 425°F (220°C).
- Toss potatoes with olive oil and seasonings in a bowl.
- Spread on a baking sheet in a single layer.
- Bake for 30-35 minutes, flipping halfway, until crispy and golden brown.
For the Fried Fish:
- Heat about 1 inch of oil in a skillet to 350°F (175°C).
- In a bowl, whisk egg and buttermilk.
- In another bowl, mix flour, cornmeal, and seasonings.
- Dip each fish fillet into the egg mixture, then coat in the flour mixture.
- Fry fish for 3-4 minutes per side, or until golden brown and crispy.
- Drain on paper towels.
