Kiwi Cheesecake recipe! 🍰🥝
Ingredients
Crust:
- 1 ½ cups graham cracker crumbs
- ¼ cup sugar
- ½ cup melted butter
Cheesecake Filling:
- 16 oz cream cheese, softened
- ½ cup sugar
- 1 tsp vanilla extract
- 2 eggs
- ½ cup sour cream
- ¼ cup heavy cream
Kiwi Topping:
- 4 kiwis, peeled and sliced
- ¼ cup sugar
- 1 tbsp lemon juice
- 1 tsp cornstarch mixed with 1 tbsp water
Instructions
- Prepare Crust – Preheat oven to 325°F (163°C). Mix graham cracker crumbs, sugar, and melted butter. Press into a springform pan. Bake for 10 minutes, then let cool.
- Make Filling – Beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, then mix in sour cream and heavy cream. Pour over the crust.
- Bake – Bake for 45-50 minutes until the center is slightly jiggly. Turn off oven, crack the door open, and let it cool for 1 hour before refrigerating for at least 4 hours.
- Prepare Kiwi Topping – In a saucepan, heat kiwi slices, sugar, and lemon juice over medium heat. Add the cornstarch mixture and stir until thickened. Let cool.
- Assemble & Serve – Spread kiwi topping over the chilled cheesecake. Slice and enjoy! 😍
