Kiwi Cheesecake recipe! 🍰🥝

Ingredients

Crust:

  • 1 ½ cups graham cracker crumbs
  • ¼ cup sugar
  • ½ cup melted butter

Cheesecake Filling:

  • 16 oz cream cheese, softened
  • ½ cup sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • ½ cup sour cream
  • ¼ cup heavy cream

Kiwi Topping:

  • 4 kiwis, peeled and sliced
  • ¼ cup sugar
  • 1 tbsp lemon juice
  • 1 tsp cornstarch mixed with 1 tbsp water

Instructions

  1. Prepare Crust – Preheat oven to 325°F (163°C). Mix graham cracker crumbs, sugar, and melted butter. Press into a springform pan. Bake for 10 minutes, then let cool.
  2. Make Filling – Beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, then mix in sour cream and heavy cream. Pour over the crust.
  3. Bake – Bake for 45-50 minutes until the center is slightly jiggly. Turn off oven, crack the door open, and let it cool for 1 hour before refrigerating for at least 4 hours.
  4. Prepare Kiwi Topping – In a saucepan, heat kiwi slices, sugar, and lemon juice over medium heat. Add the cornstarch mixture and stir until thickened. Let cool.
  5. Assemble & Serve – Spread kiwi topping over the chilled cheesecake. Slice and enjoy! 😍
