Ingredients
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- ¾ cup granulated sugar
- 2 large eggs
- 1 ½ tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- ½ tsp salt
- 1 tsp ground cinnamon
- 2 cups old-fashioned oats
- 1 ½ cups semi-sweet chocolate chips
- 1 cup chopped pecans or walnuts
- 1 cup sweetened shredded coconut
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Cream butter & sugars – In a large bowl, beat butter, brown sugar, and granulated sugar until fluffy. Add eggs one at a time, then mix in vanilla.
- Mix dry ingredients – In another bowl, whisk flour, baking soda, baking powder, salt, and cinnamon.
- Combine – Gradually mix the dry ingredients into the wet ingredients. Stir in oats, chocolate chips, pecans, and coconut.
- Scoop & bake – Drop dough by rounded tablespoons onto baking sheets. Bake for 10-12 minutes or until golden brown.
- Cool & enjoy – Let cookies cool on the pan for a few minutes before transferring to a wire rack.
