A simple yet elegant one-pan salmon dish, baked in foil with tender asparagus and a rich lemon garlic butter sauce for a flavorful, easy cleanup meal!
Ingredients:
For the Salmon & Asparagus:
- 2 salmon fillets (about 6 oz each)
- 1 bunch asparagus, trimmed
- 1 tbsp olive oil
- Salt & pepper, to taste
- 1 tsp paprika (optional, for color)
- ½ tsp red pepper flakes (optional, for heat)
- ½ lemon, sliced into thin rounds
For the Lemon Garlic Butter Sauce:
- 3 tbsp unsalted butter, melted
- 2 cloves garlic, minced
- 1 tbsp fresh lemon juice
- 1 tsp honey or maple syrup (for balance)
- ½ tsp Italian seasoning
- ½ tsp Dijon mustard (optional, for extra depth)
- 1 tbsp fresh parsley, chopped
Instructions:
1️⃣ Prep the Foil Packets:
- Preheat oven to 375°F (190°C).
- Tear two large pieces of aluminum foil and place a salmon fillet in the center of each.
2️⃣ Season & Arrange:
- Place asparagus spears around the salmon fillets.
- Drizzle everything with olive oil, then season with salt, pepper, paprika, and red pepper flakes.
- Top each fillet with thin lemon slices.
3️⃣ Make the Lemon Garlic Butter Sauce:
- In a small bowl, whisk together melted butter, garlic, lemon juice, honey, Italian seasoning, Dijon mustard, and parsley.
- Pour the sauce evenly over the salmon and asparagus.
4️⃣ Seal & Bake:
- Fold the foil over the salmon and seal tightly to create a packet.
- Place on a baking sheet and bake for 15-18 minutes, or until salmon is flaky.
5️⃣ Broil for Extra Flavor (Optional):
- Open the foil packets and broil for 2-3 minutes to slightly crisp the top.
