Bacon, Beer, and Cheese Sloppy joes

Bacon, Beer, and Cheese Sloppy Joes 🍔🥓🧀🍺

A rich, cheesy, and slightly boozy twist on a classic sloppy joe—this recipe is packed with crispy bacon, gooey cheese, and a hint of beer for extra depth of flavor!

Ingredients:

  • 6 slices bacon, chopped
  • 1 lb ground beef (80/20 for best flavor)
  • ½ cup onion, finely diced
  • 2 cloves garlic, minced
  • ½ cup beer (lager or ale works best)
  • ½ cup beef broth
  • ¼ cup ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • ½ tsp smoked paprika
  • ½ tsp black pepper
  • ½ tsp salt
  • 1 cup shredded cheddar cheese
  • 4 brioche or hamburger buns, toasted

Instructions:

  1. Cook the Bacon – In a large skillet over medium heat, cook the chopped bacon until crispy. Remove and drain on paper towels.
  2. Brown the Beef – In the same skillet with the bacon grease, add ground beef and onions. Cook until beef is browned and onions are soft (about 5 minutes). Drain excess grease if needed.
  3. Add Flavor – Stir in garlic, smoked paprika, black pepper, and salt. Cook for 1 minute until fragrant.
  4. Deglaze with Beer – Pour in beer and scrape up any bits from the bottom of the skillet. Let simmer for 2-3 minutes until slightly reduced.
  5. Simmer the Sauce – Add beef broth, ketchup, Worcestershire sauce, and Dijon mustard. Stir well and let simmer for 5-7 minutes until thickened.
  6. Make it Cheesy – Stir in shredded cheddar cheese until melted and creamy. Add the crispy bacon back in.
  7. Assemble & Serve – Spoon the sloppy joe mixture onto toasted buns and serve immediately!

Tips & Variations:

Spicy Kick? Add hot sauce or diced jalapeños.
Swap the Beer – Use root beer for a kid-friendly version.
Extra Cheese? Add a slice of cheddar or pepper jack on top!
