Here’s a Cowboy Cookies recipe—big, hearty, and packed with chocolate, oats, and nuts! 🤠🍪

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 ½ tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • 2 cups old-fashioned oats
  • 1 ½ cups semi-sweet chocolate chips
  • 1 cup chopped pecans or walnuts
  • 1 cup sweetened shredded coconut

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream butter & sugars – In a large bowl, beat butter, brown sugar, and granulated sugar until fluffy. Add eggs one at a time, then mix in vanilla.
  3. Mix dry ingredients – In another bowl, whisk flour, baking soda, baking powder, salt, and cinnamon.
  4. Combine – Gradually mix the dry ingredients into the wet ingredients. Stir in oats, chocolate chips, pecans, and coconut.
  5. Scoop & bake – Drop dough by rounded tablespoons onto baking sheets. Bake for 10-12 minutes or until golden brown.
  6. Cool & enjoy – Let cookies cool on the pan for a few minutes before transferring to a wire rack.
